Ingredients

  • 8–10 fresh mint leaves

  • 15ml sugar syrup

  • Soda water (to top up)

Method

Step 1 - Muddle the Mint


Gently muddle the mint leaves in the bottom of your glass using a bar spoon or muddler. Don’t overdo it - just enough to release the oils.

Step 2 -Add Lime and Syrup


Use a citrus press to squeeze fresh lime juice, then pour in 25ml with 15ml sugar syrup. Stir lightly to mix with the mint.

Step 3 - Add Rum and Ice


Measure 50ml white rum using a jigger and pour it into the glass. Using ice tongs, fill the glass with crushed ice almost to the top.

Step 4 - Top with Soda


Top up with soda water to taste, leaving just enough room to stir. Give the drink a final gentle mix with your bar spoon.

Step 5 - Garnish and Serve


Garnish with a fresh mint sprig and a wedge of lime. Add a straw if desired and serve immediately for maximum freshness.
